Ingredients:
3 large apples, peeled and diced
1 cup of muesli or granola (I added my homemade muesli)
1 cup blueberries
2 cups of whole wheat flour
1 cup of sugar or 12 tsp. of stevia
1 tsp. baking powder
1 tsp. cinnamon
A half teaspoon of salt
2 eggs
A half cup of yoghurt or melted butter
Preheat oven to 176 degrees Celsius
1. Prep the apples and blueberries. Set aside.
2. In a large bowl, mix all the dry ingredients together (except the muesli/granola). Make a well and pour the yoghurt/melted butter and the eggs. Mix by hand or a wooden spatula as the batter becomes thick or dough-like.
3. Fold in the apples, blueberries and the muesli/granola. Mix evenly.
4. Pour the batter in a pan (I used a 40×26 cm pan).
5. Bake for 40 minutes.


Let it cool before removing from the pan. The result was just delicious and so moist. The sweetness was just spot on to my palate (you can add more sugar or stevia on your next try if it’s not that sweet for you) I loved it! Vel bekomme!
